Cottage Cheese Pancakes

Ingredients

  • 1 cup flour
  • 1/2 t baking soda
  • 1/4 t salt
  • 2 T sugar
  • 4 eggs
  • 1 cup cottage cheese
  • 1/2 cup milk
  • 2 T oil

Instructions

  1. Combine flour, baking soda, salt and sugar
  2. Add eggs and beat well
  3. Stir in cottage cheese and milk
  4. Heat pan to medium high and add just enough oil to cover bottom of pan
  5. Scoop batter onto the pan
  6. When edges of pancake are cooked, flip and continue until lightly browned

Yield: 4 servings
